Mushroom champignon sauce

Mushroom champignon sauce is universal because it can be served with any main course. It goes well with potatoes, pasta, and crumbly porridges. By changing the side dish and adding mushroom sauce, you get a new and tasty dish every time.

Champignon sauce with vegetables and sour cream is prepared very simply and quickly. Spices can be varied to suit your taste. Champignons can be replaced with wild mushrooms; chanterelles and porcini mushrooms are perfect.

The sauce is thick, rich, with a bright mushroom taste and aroma. Instead of water, you can use mushroom broth, preferably wild mushrooms. This sauce will be very flavorful!

Ingredients for making mushroom champignon sauce:

Ingredients:

  • Fresh champignons – 300 g.

  • Onions – 2 pcs.

  • Carrots – 1 pc.

  • Wheat flour – 2 tbsp. l.

  • Sour cream – 2 tbsp. l.

  • Water – 400 ml.

  • Vegetable oil – 50 ml.

  • Salt – 0.5 tsp.

  • Ground black pepper – 0.25 tsp.

  • Bay leaf – 1 pc.

  • Black allspice – 2-3 peas.

  • Dill and parsley – 20 g.

Recipe for making mushroom sauce from champignons

Step-by-step instruction:

1. Peel the onions and cut them into small cubes. Wash the carrots, peel them, and chop them on a fine grater. Place the vegetables in a frying pan with heated vegetable oil. If desired, you can add 30 g of butter to the vegetable oil for a creamy taste.

2. Stirring, sauté onions and carrots over medium heat for 5-7 minutes until soft.

3. Wash fresh champignons and cut into small cubes. Add chopped mushrooms to sautéed vegetables. Stir and continue frying the ingredients together for 5 minutes.

4. In a separate bowl, mix wheat flour and water until smooth. Instead of water, you can use vegetable or mushroom broth, this will make the sauce even tastier and more aromatic.

5. Pour the resulting mixture into the frying pan with vegetables and champignons. Mix the ingredients, add salt and spices to taste. Cover the pan with a lid and simmer the mushroom sauce over low heat for 15 minutes.

6. Then add rich sour cream to the mushroom sauce. Stir and continue to simmer the sauce under the lid over low heat for another 5 minutes.

7. At the end of cooking, add finely chopped dill and parsley.

8. Serve aromatic mushroom sauce made from champignons with your favorite side dish. This could be vegetable puree, rice, bulgur, buckwheat, egg noodles or spaghetti.
